Back in March of 1976, George Tsares first opened Matador Pizza in Varsity. His first and best hire was Peter Panousakis, who was instrumental in curating the Greek Style pizza recipe that has stood the test of time.
In the mid 80’s, Peter branched out from Matador and opened Demetri’s Pizza in Hillhurst where he continued to provide Calgary amazing Greek Style pizzas. He retired in the early 90’s selling Demitri’s Pizza to another ownership group.
Sadly, Peter passed in 1993 but his legacy has now come full circle with the current owners of Matador Pizza Varsity having now purchased Demitri’s Pizza. They have transformed the space to be a second location of Matador Pizza! Peters’ Greek style ciabatta crust is still the beloved recipe used to this day and has made its way back to where is all began….. MATADOR PIZZA!
